My wandering son, a.k.a. Vittles, has been hiking the eastern U.S. since last April and is on his way back to California to hike the western part of the country. On his journey back to the Golden State he made a stop at home and took the time to prepare a wonderful meal for our dinner: roasted pork loin with a cream gravy, lemon garlic roasted broccoli, and caramelized onions & garlic mashed potatoes.
Keep in mind that Vittles has been living a minimalist lifestyle for the last nine months. He only carried what he needed to survive and only enough food for about 3-4 days. Everything that went into his pack was weighed in grams, not ounces, and certainly not in pounds. What he didn’t need, wasn’t packed or was sent back home at the first town.
It may surprise you (or not) that a 4 lb. pork loin, several heads of broccoli, and a huge bowl of mashed potatoes only fed 4 people with little leftovers for his lunch the next day! But at least when he left Mama Vittles’ to board the bus to finish his trip, my adventurous son wasn’t hungry, and maybe even gained a pound or two! Pound it, Vitalis Maximus!
Heading back to California, Vittles made a stop in Nashville to visit his aunt who fed him for two days
before he arrived home! All I can say is Golden Corral lost money the day he feasted there!
This was about the third helping Vittles had. Most of the others were inhaled
before I could get my camera. Okay, truth be known, I was enjoying the meal
so much I didn’t think about getting my camera until later!
